Ingredients

Scale

For the Lemon Cream Base:

  • 2 cups heavy whipping cream
  • 2 cups milk
  • 2 (3.4-ounce) packages instant lemon pudding mix
  • 2 tablespoons lemon juice

For the Whipped Cream Layer:

  • 2 cups heavy whipping cream
  • ¾ cup confectioners’ sugar
  • 1 dash vanilla extract

For the Trifle Layers:

  • 1 (9-inch) angel food cake, cubed
  • 3 cups fresh strawberries, sliced
  • 2 cups fresh blueberries

Instructions

  1. Prepare the Lemon Cream Base:
    • In a large mixing bowl, whisk together 2 cups heavy whipping cream, 2 cups milk, lemon pudding mix, and lemon juice until smooth.
    • Cover and refrigerate for 1 hour, or until set.
  2. Make the Whipped Cream:
    • In another bowl, beat the remaining 2 cups heavy whipping cream with confectioners’ sugar and vanilla extract until stiff peaks form.
  3. Assemble the Trifle:
    • In a trifle bowl, layer half of the cubed angel food cake at the bottom.
    • Top with half of the lemon cream, spreading it evenly.
    • Add half of the strawberries and blueberries.
    • Spread half of the whipped cream on top.
    • Repeat the layers with the remaining ingredients: cake, lemon cream, berries, and whipped cream.
  4. Chill and Serve:
    • Cover and refrigerate for at least 2 hours before serving.
    • Garnish with fresh berries or mint leaves, if desired.

Notes

  • Use fresh, ripe berries for the best flavor.
  • For a healthier option, replace whipped cream with Greek yogurt or use reduced-sugar pudding mix.
  • To avoid sogginess, assemble the trifle close to serving time if you plan to store it for more than 24 hours.
