Description

This Tres Leches Cake with Berries is an ultra-moist sponge cake soaked in three milks, layered with fresh berries, and topped with mascarpone whipped cream. A perfect dessert for any occasion!

  • 2 tbsp sweetened condensed milk (optional)
  • 1 cup confectioner’s sugar
  • 2 cups heavy cream, chilled

For the Tres Leches Mixture:

  • 1 cup sweetened condensed milk
  • ½ cup evaporated milk
  • ½ cup whole milk

For Filling & Garnish:

  • 6 cups mixed berries (strawberries, blueberries, raspberries, blackberries)

Instructions

  • Make the Sponge Cake:

    • Preheat oven to 350°F. Line two 8-inch cake pans with parchment paper.
    • Beat eggs, sugar, and vanilla for 7-10 minutes until pale and fluffy.
    • Sift in flour and baking powder, folding gently to maintain airiness.
    • Divide batter between pans and bake for 20-22 minutes, until golden.
    • Let cakes cool completely.
  • Prepare the Mascarpone Frosting:

    • Beat mascarpone, vanilla, and confectioner’s sugar until smooth.
    • Gradually add chilled heavy cream and beat until stiff peaks form.
  • Make the Tres Leches Mixture:

    • Whisk sweetened condensed milk, evaporated milk, and whole milk together.
  • Assemble the Cake:

    • Slice each cake layer in half to create four layers.
    • Soak each layer with the tres leches mixture.
    • Spread mascarpone frosting and add fresh berries between layers.
    • Frost the top, garnish with more berries, and refrigerate for 2-3 hours before serving.
