Ingredients

  • Unsalted Butter: 400 g
  • Powdered Sugar: 225 g
  • Eggs: 2
  • Flour: 900 g
  • Pistachios: 15 g (plus extra for garnish)
  • Cocoa Powder: 5 g
  • Hazelnuts: 30 g
  • Peanuts: 125 g
  • Strawberry Jam: 60 g

Instructions

  1. Prepare the Dough: Mix softened butter, powdered sugar, vanilla sugar, salt, and eggs in a large bowl until smooth. Add flour and baking powder; knead until well combined. Divide dough into three equal portions.
  2. Pistachio-Lemon Cookies: Mix one portion with ground pistachios and lemon zest. Roll out to ½ cm thick, cut into shapes, and place on a parchment-lined baking sheet.
  3. Chocolate Sticks: Combine cocoa powder with another portion of dough. Shape into sticks about 8 cm long and place on a baking sheet.
  4. Peanut Thumbprint Cookies: Keep the third portion plain; shape into balls and flatten slightly. Dip in egg white then roll in chopped peanuts. Create a thumbprint in the center before placing on the baking sheet.
  5. Bake: Preheat oven to 190 °C (375 °F) and bake cookies for about 10–15 minutes until golden.
  6. Decorate: Melt chocolate as desired for drizzling or dipping once the cookies cool.
