Instructions

  1. Preheat your oven to 160 °C (320 °F) fan-forced.
  2. Line a giant muffin tin with oversized liners.
  3. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
  4. In another bowl, mix yogurt or sour cream with soda water or cola, vegetable oil, coffee powder, eggs, and vanilla extract until smooth.
  5. Make a well in the dry ingredients and pour in the wet mixture; stir gently until just combined.
  6. Fold in chopped milk chocolate pieces and reserve some for topping.
  7. Fill each muffin liner generously with batter and top with extra chocolate chunks.
  8. Bake for 30–33 minutes until centers spring back when lightly pressed.
  9. Prepare ganache by heating cream over dark chocolate; stir until smooth.
  10. Once cooled slightly, create a well in each muffin and fill with ganache.
