  • lb raw shrimp, peeled and deveined
  • 1 cup chopped tomatoes
  • ½ cup chopped English cucumber
  • ¼ cup chopped red onion
  • 1 jalapeño, deseeded and finely chopped
  • ¼ cup chopped cilantro
  • 1 cup fresh lime juice (about 812 limes)
  • 12 avocados, diced or mashed

Instructions

  1. Chop the shrimp into bite-sized pieces and place them in a 9×13 inch pan.
  2. Pour lime juice over the shrimp until fully submerged. Cover tightly with plastic wrap and let marinate at room temperature for 1 hour.
  3. Refrigerate for an additional 1-2 hours until shrimp are opaque.
  4. While marinating, chop the tomatoes, cucumber, onion, jalapeño, and cilantro; keep refrigerated.
  5. Once shrimp are ready, mix in the prepared vegetables until well combined.
  6. Optional: Top with diced or mashed avocado before serving.
