This easy crockpot lasagna is the perfect hands-off meal! With layers of tender noodles, rich meat sauce, and gooey cheese, it’s a comforting classic made simple in a slow cooker.

For the Lasagna:
- 1 lb ground beef
- 1 small onion, finely diced
- 1 tbsp minced garlic
- 26 oz spaghetti sauce (or 32 oz if preferred)
- 1 cup water
- 15 oz cottage cheese (or ricotta substitute)
- 1 ½ cups shredded mozzarella cheese
- 2 tbsp grated parmesan cheese
- 1 large egg
- 2 tbsp chopped fresh parsley (optional)
- 8–10 uncooked lasagna noodles
For the Topping:
- ½ cup shredded mozzarella cheese
- ⅓ cup grated parmesan cheese
Instructions
- Brown the Beef: In a skillet, cook ground beef and onion until browned. Add garlic and cook for 1-2 minutes. Drain excess grease.
- Make the Sauce: Stir in spaghetti sauce and water, then simmer for 5 minutes.
- Prepare the Cheese Mixture: In a bowl, mix cottage cheese, mozzarella, parmesan, egg, and parsley until well combined.
- Assemble the Lasagna:
- Spray crockpot with non-stick spray.
- Layer 1 cup of meat sauce at the bottom.
- Add a layer of uncooked lasagna noodles (breaking them to fit).
- Spread cheese mixture over the noodles.
- Repeat layers until ingredients are used, finishing with meat sauce.
- Cook on LOW for 3-5 hours or until noodles are soft.
- Add Final Cheese Topping: Sprinkle mozzarella & parmesan cheese over the top, cover, and cook for 10-15 minutes until melted.
- Rest & Serve: Let lasagna cool for 10 minutes before slicing.
Notes
- Use lean ground beef or ground turkey for a healthier option.
- Add spinach, mushrooms, or zucchini for extra nutrition.
- Store leftovers in the fridge for up to 4 days or freeze for up to 3 months.
