Description

This easy crockpot lasagna is the perfect hands-off meal! With layers of tender noodles, rich meat sauce, and gooey cheese, it’s a comforting classic made simple in a slow cooker.

For the Lasagna:

  • 1 lb ground beef
  • 1 small onion, finely diced
  • 1 tbsp minced garlic
  • 26 oz spaghetti sauce (or 32 oz if preferred)
  • 1 cup water
  • 15 oz cottage cheese (or ricotta substitute)
  • 1 ½ cups shredded mozzarella cheese
  • 2 tbsp grated parmesan cheese
  • 1 large egg
  • 2 tbsp chopped fresh parsley (optional)
  • 810 uncooked lasagna noodles

For the Topping:

  • ½ cup shredded mozzarella cheese
  • ⅓ cup grated parmesan cheese

Instructions

  • Brown the Beef: In a skillet, cook ground beef and onion until browned. Add garlic and cook for 1-2 minutes. Drain excess grease.
  • Make the Sauce: Stir in spaghetti sauce and water, then simmer for 5 minutes.
  • Prepare the Cheese Mixture: In a bowl, mix cottage cheese, mozzarella, parmesan, egg, and parsley until well combined.
  • Assemble the Lasagna:
    • Spray crockpot with non-stick spray.
    • Layer 1 cup of meat sauce at the bottom.
    • Add a layer of uncooked lasagna noodles (breaking them to fit).
    • Spread cheese mixture over the noodles.
    • Repeat layers until ingredients are used, finishing with meat sauce.
  • Cook on LOW for 3-5 hours or until noodles are soft.
  • Add Final Cheese Topping: Sprinkle mozzarella & parmesan cheese over the top, cover, and cook for 10-15 minutes until melted.
  • Rest & Serve: Let lasagna cool for 10 minutes before slicing.
