  • 1 pound chicken breast, thinly sliced
  • 1 tablespoon vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 can (14 ounces) coconut milk
  • 2 tablespoons red curry paste
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • Fresh basil leaves for garnish

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat. Add the chicken and cook until browned (about 5-7 minutes). Remove and set aside.
  2. In the same skillet, sauté red and yellow bell peppers for 3-4 minutes, then add broccoli and cook for another 2 minutes.
  3. Lower the heat and stir in red curry paste; cook until fragrant (about 1 minute). Gradually add coconut milk, fish sauce, brown sugar, and lime juice while stirring.
  4. Return the chicken to the skillet; stir to coat in sauce. Simmer for 5-10 minutes.
  5. Garnish with fresh basil leaves and serve over jasmine rice.
