- 180–220g chicken breast
- 150g mixed lettuce leaves
- 1 cup cherry tomatoes, halved
- 1 small cucumber, sliced
- 1/4 red onion, finely sliced
- 1/2 cup roasted cashews
- Thai chilli lime dressing (includes garlic, lime juice, fish sauce, oil, sugar, and Chilli Garlic Sauce)
Instructions
- Poach the chicken in simmering water for about 20 minutes. Let it rest before shredding.
- In a jar, combine the dressing ingredients: garlic, lime juice, fish sauce, oil, sugar, and Chilli Garlic Sauce. Shake well.
- In a large bowl, mix the lettuce, tomatoes, cucumber, onion, cashews, and shredded chicken. Drizzle with dressing and toss gently.
- Serve immediately for best freshness.
