Ingredients

  • 180220g chicken breast
  • 150g mixed lettuce leaves
  • 1 cup cherry tomatoes, halved
  • 1 small cucumber, sliced
  • 1/4 red onion, finely sliced
  • 1/2 cup roasted cashews
  • Thai chilli lime dressing (includes garlic, lime juice, fish sauce, oil, sugar, and Chilli Garlic Sauce)

Instructions

  1. Poach the chicken in simmering water for about 20 minutes. Let it rest before shredding.
  2. In a jar, combine the dressing ingredients: garlic, lime juice, fish sauce, oil, sugar, and Chilli Garlic Sauce. Shake well.
  3. In a large bowl, mix the lettuce, tomatoes, cucumber, onion, cashews, and shredded chicken. Drizzle with dressing and toss gently.
  4. Serve immediately for best freshness.
