Description

  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • 1 cup cornmeal
  • 1 cup milk
  • 2 large eggs

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, brown the ground beef. Add chili powder, cumin, garlic powder, onion powder, salt, and pepper; cook until fragrant.
  3. Stir in black beans, corn, and diced tomatoes; set aside.
  4. In a mixing bowl, combine cornmeal, milk, eggs, baking powder, and melted butter until smooth.
  5. In a greased baking dish, layer the beef mixture evenly on the bottom. Pour the cornbread batter over it and top with shredded cheese.
  6. Bake for 25-30 minutes until golden brown. Let cool before slicing.
