Instructions
- Preheat the oven to 400°F. Pierce each sweet potato with a fork and bake on a baking sheet for 45-60 minutes until tender.
- In a skillet over medium heat, cook the ground beef with salt, black pepper, chili powder, and cumin until browned.
- Mix in black beans, corn, and diced tomatoes; cook for an additional 3-5 minutes.
