  • 1 jalapeño (sliced)
  • 1 Tbsp olive oil
  • 1 Tbsp butter
  • 3 cloves garlic (minced)
  • 1 inch ginger (minced)
  • ¾ cup sweet chili sauce (adjust as needed)
  • 12 Tbsp honey
  • 1 lime (sliced)
  • 3 Tbsp green onions (chopped)

Instructions

  1. Preheat the oven to 375ºF.
  2. Cube the chicken and season with corn starch, salt, black pepper, and red pepper in a large bowl.
  3. Drizzle olive oil on a baking sheet; arrange seasoned chicken and sliced vegetables without overlapping.
  4. Bake for about 20 minutes, flipping halfway through until the internal temperature reaches 165ºF.
  5. In a saucepan, melt butter; sauté garlic and ginger before adding sweet chili sauce and honey.
  6. Once baked, combine chicken and vegetables with the sauce; serve hot garnished with lime slices and green onions.
