For the Wings:
- 3 lbs chicken wings
- 3 tbsp unsalted butter, melted
- 2 tbsp sesame oil
- 2 ½ tsp garlic powder
- 1 tsp kosher salt
- ¾ tsp black pepper
- ¼ tsp cayenne pepper
For the Sweet and Spicy Sauce:
- 4 tbsp unsalted butter
- ½ tsp red pepper flakes
- 1 tsp fresh ginger, grated
- ⅓ cup honey
- ⅓ cup Sriracha sauce
- 1 tbsp soy sauce
- 1 tbsp fresh lime juice
- 1 tbsp rice wine vinegar
- 1 tsp cornstarch
For Garnish:
- 2 tsp sesame seeds
- ¼ cup fresh cilantro, chopped
- Lime wedges (optional)
Instructions
Step 1: Prepare the Wings
- Preheat the oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper.
- Pat the chicken wings completely dry with paper towels to remove excess moisture.
- In a small bowl, mix melted butter, sesame oil, garlic powder, salt, black pepper, and cayenne pepper.
- Toss the wings in the seasoning mixture until evenly coated.
Step 2: Bake the Wings
- Arrange the wings in a single layer on the baking sheet, ensuring they are not crowded.
- Bake for 50-55 minutes, flipping halfway through for even crispiness.
Step 3: Make the Sweet and Spicy Sauce
- Melt butter in a saucepan over medium heat.
- Add red pepper flakes and grated ginger, cooking for 1 minute.
- Stir in honey, Sriracha, soy sauce, lime juice, and rice vinegar.
- Bring to a light boil, then whisk in cornstarch to thicken. Cook for 30 seconds, then remove from heat.
Step 4: Coat & Broil the Wings
- Toss the baked wings in the warm sauce until fully coated.
- Turn the oven to broil and return the wings to the baking sheet.
- Broil for 4-5 minutes, watching closely to prevent burning.
Step 5: Garnish & Serve
- Sprinkle with sesame seeds and fresh cilantro.
