For the Sweet and Spicy Sauce:

  • 4 tbsp unsalted butter
  • ½ tsp red pepper flakes
  • 1 tsp fresh ginger, grated
  • ⅓ cup honey
  • ⅓ cup Sriracha sauce
  • 1 tbsp soy sauce
  • 1 tbsp fresh lime juice
  • 1 tbsp rice wine vinegar
  • 1 tsp cornstarch

For Garnish:

  • 2 tsp sesame seeds
  • ¼ cup fresh cilantro, chopped
  • Lime wedges (optional)

Instructions

Step 1: Prepare the Wings

  1. Preheat the oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper.
  2. Pat the chicken wings completely dry with paper towels to remove excess moisture.
  3. In a small bowl, mix melted butter, sesame oil, garlic powder, salt, black pepper, and cayenne pepper.
  4. Toss the wings in the seasoning mixture until evenly coated.

Step 2: Bake the Wings

  1. Arrange the wings in a single layer on the baking sheet, ensuring they are not crowded.
  2. Bake for 50-55 minutes, flipping halfway through for even crispiness.

Step 3: Make the Sweet and Spicy Sauce

  1. Melt butter in a saucepan over medium heat.
  2. Add red pepper flakes and grated ginger, cooking for 1 minute.
  3. Stir in honey, Sriracha, soy sauce, lime juice, and rice vinegar.
  4. Bring to a light boil, then whisk in cornstarch to thicken. Cook for 30 seconds, then remove from heat.

Step 4: Coat & Broil the Wings

  1. Toss the baked wings in the warm sauce until fully coated.
  2. Turn the oven to broil and return the wings to the baking sheet.
  3. Broil for 4-5 minutes, watching closely to prevent burning.
