Packed with crunchy vegetables, tender macaroni, and a unique dressing made with Miracle Whip, mustard, and vinegar, this Amish-inspired salad is perfect for summer barbecues, potlucks, or any family gathering.

Ingredients

Scale

For the Salad:

  • 2 cups uncooked elbow macaroni
  • 3 large hard-cooked eggs, chopped
  • 1 small onion, chopped
  • 3 stalks celery, chopped
  • 1 small red bell pepper, seeded and chopped
  • 2 tablespoons dill pickle relish

For the Dressing:

  • 2 cups creamy salad dressing (e.g., Miracle Whip)
  • ¾ cup white sugar
  • 3 tablespoons prepared yellow mustard
  • 2 ¼ teaspoons white vinegar
  • ¾ teaspoon celery seed
  • ¼ teaspoon salt

Instructions

  • Cook the Macaroni:
    • Bring a large pot of lightly salted water to a boil.
    • Add macaroni and cook for 8 minutes, stirring occasionally, until al dente.
    • Drain and rinse under cold water to cool completely.
  • Prepare the Vegetables and Eggs:
    • Chop the hard-cooked eggs, onion, celery, and red bell pepper into small, uniform pieces.
  • Make the Dressing:
    • In a small mixing bowl, whisk together Miracle Whip, sugar, mustard, vinegar, celery seed, and salt until smooth.
  • Combine the Salad:
    • In a large mixing bowl, combine the eggs, onion, celery, bell pepper, and pickle relish.
    • Pour the dressing over the vegetable mixture and stir well.
    • Add the cooled macaroni and gently mix until all ingredients are evenly coated.
  • Chill and Serve:
    • Cover the salad and refrigerate for at least 1 hour to allow the flavors to meld.
    • Stir before serving and garnish with fresh parsley or paprika, if desired.

Notes

  • For a milder onion flavor, use a sweet onion or soak chopped onions in cold water for 10 minutes before adding them to the salad.
  • To save time, cook the macaroni and eggs ahead of time and assemble the salad just before serving.
