Ingredients

  • 1 1/2 cups uncooked millet
  • 1/31/2 cup sliced black olives
  • 1/2 cup capers
  • 1/2 cucumber, diced
  • 2 spring onions, sliced
  • 1 small red pepper, diced
  • Juice of 1 lemon
  • 2 tsp dijon mustard
  • 2 tbsp apple cider vinegar
  • Optional maple syrup
  • Salt
  • Black pepper

Instructions

  1. Rinse millet under cold water. Boil 4½ cups of water in a medium pot. Add millet and reduce heat to medium-low; cook for about 20 minutes until tender. Drain excess liquid.
  2. While cooking, chop vegetables: dice cucumber, spring onions, and red pepper; slice olives.
  3. In a mixing bowl, whisk together lemon juice, dijon mustard, apple cider vinegar, optional maple syrup, salt, and black pepper.
  4. Once cooled slightly, combine millet with dressing and all chopped vegetables in a large bowl.
  5. Cover and chill in the fridge before serving.
