Ingredients
- 1 1/2 cups uncooked millet
- 1/3 – 1/2 cup sliced black olives
- 1/2 cup capers
- 1/2 cucumber, diced
- 2 spring onions, sliced
- 1 small red pepper, diced
- Juice of 1 lemon
- 2 tsp dijon mustard
- 2 tbsp apple cider vinegar
- Optional maple syrup
- Salt
- Black pepper
Instructions
- Rinse millet under cold water. Boil 4½ cups of water in a medium pot. Add millet and reduce heat to medium-low; cook for about 20 minutes until tender. Drain excess liquid.
- While cooking, chop vegetables: dice cucumber, spring onions, and red pepper; slice olives.
- In a mixing bowl, whisk together lemon juice, dijon mustard, apple cider vinegar, optional maple syrup, salt, and black pepper.
- Once cooled slightly, combine millet with dressing and all chopped vegetables in a large bowl.
- Cover and chill in the fridge before serving.
