  • 1 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • 1 cup steamed broccoli florets
  • ½ cup chopped green onions
  • 2 tablespoons fresh parsley

Instructions

  1. Preheat oven to 400°F (200°C). Pierce potatoes with a fork and bake on the rack for 45-60 minutes until tender.
  2. In a skillet over medium heat, heat olive oil. Add diced chicken seasoned with salt, pepper, and smoked paprika; cook for 8-10 minutes until fully cooked.
  3. In a bowl, combine cooked chicken, steamed broccoli, cheddar cheese, sour cream, and half of the green onions.
  4. Once potatoes are baked, cut a slit down each potato and scoop out some flesh to create space for filling.
  5. Stuff each potato with the chicken mixture and return to the oven for an additional 10 minutes until heated through.
