- 2 pounds fresh strawberries (hulled and quartered)
- 1 ¼ cups sugar (for strawberries)
- 1 ½ cups cold heavy whipping cream
- 1 tablespoon sugar (for whipped cream)
- 1 teaspoon vanilla extract
Instructions
- Prepare the strawberries by hulking and quartering them. Combine with 1 ¼ cups of sugar in a bowl and let sit for about 30 minutes to release their juices.
- Preheat your oven to 425°F (220°C).
- In a mixing bowl, combine flour, baking powder, sugar, and salt. Cut in the cold butter until crumbly.
- In another bowl, mix the milk with the beaten egg; gradually add to the dry ingredients until just combined.
- Drop spoonfuls of dough onto a lined baking sheet and bake for about 15 minutes until golden brown.
- Whip the heavy cream with sugar and vanilla extract until soft peaks form.
- Slice each cooled shortcake in half, drizzle with strawberry syrup, layer on whipped cream and strawberries, then top with the other half.
