- 1 large egg yolk
- 1 ½ cups milk
- 2 large egg yolks
- ½ cup granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- Fresh strawberries, thinly sliced
Instructions
- In a food processor, blend flour, salt, and sugar. Add butter and pulse until crumbly. Combine egg yolk and cold water; mix into flour until dough forms. Chill for at least 30 minutes.
- Preheat oven to 350°F (175°C). Roll out chilled dough to fit tart pan; press into pan and prick base.
- Bake crust lined with parchment paper and weights for 15-20 minutes; remove weights and bake until golden brown (10 more minutes). Cool completely.
- Heat milk in a saucepan until boiling. Whisk egg yolks, sugar, and cornstarch in a bowl; gradually add hot milk while whisking. Return to heat until thickened. Stir in vanilla; cool before refrigerating.
- Whip heavy cream to soft peaks; fold into cooled custard cream.
- Pour custard into cooled tart shell; top with sliced strawberries and optional rose petals.
