Ingredients

  • 1 ginger bug
  • 1 pound strawberries, sliced
  • 34 rhubarb stalks, sliced
  • 1 gallon water (divided)
  • 12 cups sugar (to taste)

Instructions

  1. Boil strawberries and rhubarb in half a gallon of water for 15-20 minutes.
  2. Allow the mixture to cool before transferring it to a wide-mouth gallon jar.
  3. Stir in 1-2 cups of sugar until dissolved.
  4. Fill the jar with cold, unchlorinated water and add the ginger bug.
  5. Cover the jar with cheesecloth and place it in a warm spot away from direct sunlight.
  6. Stir the mixture at least twice daily for even fermentation.
  7. Check for bubbles after 2-7 days; when bubbly, strain out the fruit and bottle the soda.
  8. Let bottles sit at room temperature for one or two more days before refrigerating.
