  • 2 tbsp cornstarch
  • 1/2 (3 oz) box of strawberry jello mix
  • 3 cups fresh strawberries, sliced

Cream Cheese Spread:

  • 8 oz full-fat cream cheese, room temp
  • 1/2 cup (100g) granulated sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp fresh lemon juice

Instructions

  • Preheat oven to 350°F (175°C). Line a pizza pan with parchment paper.
  • Prepare the shortbread crust: Mix butter, sugar, and flour until crumbly. Press into a 10-inch round shape on the pan. Bake for 10-12 minutes. Cool completely.
  • Make the strawberry sauce: In a saucepan, whisk water, sugar, and cornstarch. Cook until thickened, then mix in the strawberry jello. Refrigerate to cool.
  • Prepare the cream cheese spread: Beat cream cheese, sugar, vanilla, and lemon juice until smooth. Spread over the cooled crust and freeze for 15 minutes.
  • Assemble the pizza: Spread strawberry sauce over the cream cheese layer, then arrange fresh strawberries on top. Chill for 2 hours before slicing.
