  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 2 large eggs
  • ½ cup strawberry puree or jam
  • 1 ½ cups crushed graham crackers or golden Oreos
  • ¼ cup unsalted butter, melted
  • 1 cup crushed golden Oreos or vanilla wafers
  • ½ cup freeze-dried strawberries, crushed
  • 3 tbsp melted butter

Instructions

  1. Preheat oven to 325°F (163°C). Line a mini muffin tin or an 8×8-inch pan with parchment paper.
  2. Mix crushed graham crackers and melted butter in a bowl. Press into the bottom of muffin cups or larger pan.
  3. In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in sour cream, vanilla extract, and strawberry puree until combined.
  4. Pour cheesecake mixture over the crust in muffin cups or pan. Bake for 20-25 minutes for mini bites or 35-40 minutes for larger pan until slightly jiggly in the center.
  5. Cool at room temperature before chilling in the refrigerator for at least 4 hours.
  6. For the topping, mix crushed Oreos, freeze-dried strawberries, and melted butter until crumbly. Once chilled, sprinkle topping over cheesecake bites.
