Description

Ingredients

  • 8 oz. ribeye steak (butterflied or thinly sliced into 4 portions)
  • Sea salt and black pepper, to taste
  • 1 tablespoon Worcestershire sauce
  • 1/4 white onion, thinly sliced
  • 3 tablespoons butter, divided
  • 4 large eggs
  • 8 slices cheddar cheese (or white American cheese)
  • 4 high-quality bagels

Instructions

  • Prepare the Steak: Butterfly or thinly slice the steak. Cut it into 4 smaller portions, season with salt, pepper, and Worcestershire sauce. Set aside.
  • Caramelize the Onions: Heat 1 tablespoon of butter in a skillet. Cook onions over medium heat, stirring occasionally, for 9-12 minutes until soft and golden. Set aside.
  • Cook the Steak: Heat another tablespoon of butter in a stainless steel skillet over medium-high heat. Sear steak for 1 minute per side, or until cooked to your desired doneness. Remove and let rest.
  • Fry the Eggs: Heat the remaining butter in a non-stick skillet over medium-low heat. Crack eggs into the pan, breaking yolks if desired. Cook until whites are set. Flip, top with cheese slices, and cook for another 2 minutes until cheese melts.
  • Toast the Bagels: Slice bagels in half and toast until golden brown. Spread lightly with butter if desired.
  • Assemble the Sandwich: Layer each bagel with cheese, steak, caramelized onions, fried egg (with cheese), and the top half of the bagel. Serve hot!

Notes

  • For extra flavor, add a garlic aioli or spicy sriracha mayo to the toasted bagel halves.
  • Use whole-grain bagels or low-carb bagels for a healthier version.
