  • 2 cups granulated sugar
  • 4 large eggs

  • 1 cup unsweetened cocoa powder

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon peppermint extract
  • Green food coloring (optional)
  • 4 ounces semisweet chocolate, chopped
  • 1/2 cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan and line with parchment paper.
  2. Melt butter in a saucepan and mix in sugar until combined. Add eggs one at a time, followed by vanilla.
  3. In another bowl, sift flour, cocoa powder, salt, and baking powder. Gradually stir into the wet mixture until combined.
  4. Bake for 25-30 minutes until a toothpick comes out with moist crumbs. Cool completely.
  5. For frosting, mix powdered sugar, milk, peppermint extract, and food coloring until smooth; spread over cooled brownies.
  6. Heat cream in a saucepan; remove from heat and stir in chopped chocolate until smooth. Pour ganache over frosting; let set before cutting.
