  • 4 ounces bittersweet chocolate
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 15 mint Oreo cookies
  • 8 ounces cream cheese
  • 1 cup powdered sugar
  • ½ teaspoon peppermint extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×13 inch baking pan with parchment paper.
  2. Melt ½ cup butter and chopped bittersweet chocolate in a saucepan over low heat until smooth. Remove from heat and stir in sugars.
  3. Add eggs one at a time and mix well after each addition. Stir in vanilla extract, then fold in flour, salt, and baking powder until just combined.
  4. Pour brownie batter into the prepared pan and bake for 20-25 minutes until a toothpick comes out with moist crumbs. Cool completely.
  5. In a bowl, beat cream cheese until smooth, mix in powdered sugar and peppermint extract, then fold in crushed mint Oreos. Spread this mixture over the cooled brownie layer.
  6. For the ganache, melt remaining butter and chocolate chips together until smooth, then spread over the mint Oreo layer.
  7. Chill for at least one hour before cutting into squares and serving.
