  • 1 cup unsalted butter
  • 8 ounces semi-sweet chocolate, chopped
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon peppermint extract
  • Green food coloring (as desired)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan and line it with parchment paper.
  2. In a saucepan over low heat, melt the butter and semi-sweet chocolate, stirring until smooth. Remove from heat and let cool slightly.
  3. In a large bowl, whisk together sugar and the melted chocolate mixture. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. In another bowl, whisk flour, salt, and baking powder together. Gradually mix into the chocolate mixture until just combined.
  5. Pour brownie batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out with moist crumbs. Let cool in the pan.
  6. For the mint swirl, mix powdered sugar, milk, peppermint extract, and green food coloring until desired tint is achieved.
  7. Once cooled, spread the mint mixture over the brownies and swirl gently with a knife or toothpick for a marbled effect.
  8. Refrigerate for about an hour to set before cutting into squares.
