Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking soda, salt, and cocoa powder; set aside.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time and mix in the vanilla extract until smooth.
- Gradually incorporate the dry ingredients into the wet mixture until just combined.
- Drop rounded balls of dough onto the prepared baking sheet, spaced about 2 inches apart.
- Bake for 10-12 minutes until edges are set; press one mint chocolate kiss into each warm cookie immediately after removing from the oven.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
