  • ½ teaspoon salt
  • 1 cup unsweetened cocoa powder
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mint chocolate kisses, unwrapped

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, salt, and cocoa powder; set aside.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time and mix in the vanilla extract until smooth.
  5. Gradually incorporate the dry ingredients into the wet mixture until just combined.
  6. Drop rounded balls of dough onto the prepared baking sheet, spaced about 2 inches apart.
  7. Bake for 10-12 minutes until edges are set; press one mint chocolate kiss into each warm cookie immediately after removing from the oven.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
