Ingredients
- 2 tablespoons olive oil or unsalted butter
- 2 pounds sweet onions, thinly sliced
- 1 cup apple juice or unsweetened apple cider
- ½ cup apple cider vinegar
- 1 cup honey
- ½ cup brown sugar
- 2 teaspoons minced garlic
- 1 teaspoon coarse salt
- ½ teaspoon ground black pepper
- ¼ teaspoon dry mustard powder
- 1 teaspoon crushed red pepper flakes
Instructions
- Peel and thinly slice the sweet onions until you have about 6 cups.
- In a large heavy-bottomed pot, heat olive oil or butter over medium heat. Add onions along with apple juice, vinegar, garlic, salt, pepper, mustard powder, and red pepper flakes. Cook while stirring occasionally until softened (about 5–7 minutes).
- If using low/no-sugar pectin, stir it in now and bring the mixture to a full boil.
- Add honey and brown sugar; return to a rolling boil for 1 minute while stirring continuously until thickened.
- Remove from heat and skim any foam off the top if necessary.
