For the Buffalo Shrimp:

  • 1 lb large shrimp, peeled and deveined
  • 1 cup all-purpose flour
  • ½ cup cornstarch
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp cayenne pepper
  • Salt and black pepper to taste
  • 2 large eggs
  • ½ cup buttermilk
  • 1 cup hot sauce (such as Frank’s RedHot)
  • ¼ cup unsalted butter, melted
  • 1 tbsp honey (optional)
  • Vegetable oil for frying

For the Cool Ranch Dipping Sauce:

  • ½ cup mayonnaise
  • ½ cup sour cream
  • ¼ cup buttermilk
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • 1 tbsp fresh dill, chopped
  • 1 tbsp fresh chives, chopped
  • 1 tsp lemon juice
  • Salt and pepper to taste

Instructions

Step 1: Prepare the Shrimp

  1. Pat the shrimp dry with paper towels.
  2. In a bowl, mix flour, cornstarch, paprika, garlic powder, onion powder, cayenne, salt, and pepper.
  3. In a separate bowl, whisk eggs with buttermilk.

Step 2: Coat the Shrimp

  1. Dredge shrimp in the flour mixture, coating evenly.
  2. Dip into the egg and buttermilk mixture.
  3. Coat again in the flour mixture for a double layer.

Step 3: Fry the Shrimp

  1. Heat oil in a deep pan to 350°F.
  2. Fry shrimp in batches for 2-3 minutes until golden and crispy.
  3. Remove and place on a wire rack.

Step 4: Make the Buffalo Sauce

  1. In a saucepan, melt butter over low heat.
  2. Add hot sauce and whisk until smooth.
  3. Stir in honey for a hint of sweetness.

Step 5: Toss the Shrimp

  1. Place fried shrimp in a bowl.
  2. Pour Buffalo sauce over and toss to coat evenly.

Step 6: Make the Ranch Dipping Sauce

  1. In a bowl, combine mayonnaise, sour cream, and buttermilk.
  2. Add garlic powder, onion powder, dill, chives, lemon juice, salt, and pepper.
  3. Mix well and chill for 15 minutes before serving.

Step 7: Serve & Enjoy

  1. Arrange Buffalo shrimp on a plate.
  2. Serve with a side of ranch dressing.
  3. Garnish with fresh parsley if desired.

Notes

  • For a healthier version, use an air fryer at 400°F for 8-10 minutes.
  • Adjust spice levels by increasing or reducing cayenne and hot sauce.
  • Store leftovers in the fridge for up to 2 days and reheat in the oven at 375°F.
