  • 1 pound dried black-eyed peas
  • 4 cups water
  • ¼ cup butter
  • 1 medium onion, finely diced
  • 2 ham hocks or ham bone
  • 12 teaspoons salt (to taste)
  • 1 teaspoon black pepper

Instructions

  1. Rinse the dried black-eyed peas under cold water and soak overnight or use the quick-soak method.
  2. In a large Dutch oven, melt butter over medium heat. Add diced onion and sauté until translucent.
  3. Add water, ham hocks, soaked peas, salt, and pepper to the pot. Stir to combine.
  4. Cover and simmer over low heat for 4 hours, stirring occasionally.
  5. Remove ham hocks, trim the meat, and discard bones and skin. Chop the meat and return it to the pot.
  6. Taste and adjust the seasonings. Simmer for another hour or until peas reach your desired consistency.
  7. Serve hot, either as a standalone dish or over rice. Garnish with fresh diced onion or parsley for added flavor.

  • For a vegetarian version, substitute ham hocks with smoked paprika or liquid smoke and use vegetable broth.
