Wet Ingredients

  • 1/4 cup butter, softened
  • 1/4 cup cream cheese, softened
  • 1 egg
  • 3 Tbsp fresh lemon juice

Dry Ingredients

  • 1 cup granulated sugar
  • 3 Tbsp lemon zest (about 3 large lemons)
  • 1/2 tsp salt
  • 2 cups all-purpose flour
  • 2 tsp cornstarch
  • 1/2 tsp baking soda
  • 1/2 cup powdered sugar (for coating the dough balls)

Instructions

  • Preheat oven to 350°F and line baking sheets with parchment paper.
  • In a large bowl, cream the butter and cream cheese until light and fluffy.
  • Add granulated sugar and beat until fully combined.
  • Mix in the egg, lemon zest, and lemon juice until smooth.
  • In a separate bowl, whisk together the flour, cornstarch, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Scoop the dough into 1-inch balls and roll them in powdered sugar until fully coated.
  • Place the dough balls on prepared baking sheets, spaced 2 inches apart.
  • Bake for 12-13 minutes, or until the edges are set and the tops have a slight crackle.
  • Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
