Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • ¾ cup unsalted butter
  • ¾ cup brown sugar
  • ½ cup molasses
  • 1 large egg
  • 1 tablespoon ground ginger
  • 1 teaspoon baking soda
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 23 tablespoons heavy cream
  • 1 vanilla bean, seeds scraped out
  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter
  • ½ cup heavy cream
  • 1 teaspoon sea salt

Instructions

  1. In a bowl, mix flour, baking soda, spices, and salt. In another bowl, beat butter and brown sugar until fluffy. Add molasses, egg, and vanilla; mix well. Gradually combine dry ingredients into wet until just mixed. Chill dough for at least 2 hours.
  2. Preheat oven to 350°F (175°C). Roll chilled dough into balls and flatten slightly on parchment-lined baking sheets. Bake for 8-10 minutes until set; cool completely.
  3. For frosting, beat softened butter until creamy; gradually add powdered sugar and heavy cream until smooth and fluffy.
  4. Prepare salted caramel by melting sugar over medium heat until golden, then stir in butter and cream; mix in sea salt.
  5. Once cookies are cool, frost each with buttercream and drizzle with salted caramel before serving.
