Description

Ingredients

  • 1 cup unsalted butter, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 ¼ cups all-purpose flour
  • 1 cup very finely chopped pecans
  • ¼ teaspoon salt
  • ⅓ cup powdered sugar (for rolling, or more as needed)

Instructions

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream butter, powdered sugar, and vanilla extract with an electric mixer until smooth.
  • Gradually add flour, pecans, and salt, mixing until fully combined.
  • Roll dough into walnut-sized balls and place 2 inches apart on the prepared baking sheet.
  • Bake for 12-15 minutes until the bottoms are lightly golden, but tops remain pale.
  • Let cookies cool for 5 minutes, then roll in powdered sugar while still warm.
  • Allow to cool completely, then roll in powdered sugar again for a perfect snowy finish.
  • Enjoy immediately or store in an airtight container.
