- 1 rack baby back ribs
- 1 tbsp black or white pepper
- 1 tsp kosher salt
- 2 tbsp paprika
- 1 tsp onion powder
- 1 tsp celery salt
- 1 tbsp garlic powder
- 2 tbsp brown sugar
- 2 tbsp apple cider vinegar
- 1/4 cup apple juice or cider
- 4 tbsp butter (cubed)
Instructions
- Pre-soak wood chips in water for 30 minutes.
- Preheat your smoker to 225°F (107°C) with soaked wood chips.
- Pat dry the ribs and trim excess fat. Remove silver skin from the back.
- Mix all rub ingredients and coat both sides of the ribs generously.
- Let seasoned ribs rest while the smoker reaches temperature.
- Place ribs in the smoker and smoke undisturbed for three hours.
- Wrap ribs in aluminum foil with butter, apple juice/cider, and brown sugar; seal tightly.
- Return wrapped ribs to smoker and cook for an additional two hours.
- Open foil to baste with juices, then finish cooking to your preference.
