Slow Cooker Mississippi Pot Roast is the ultimate comfort food. With just five simple ingredients—tender chuck roast, ranch dressing mix, au jus gravy mix, butter, and tangy pepperoncini—this dish is easy to make, full of flavor, and perfect for family dinners or meal prep.

Main Ingredients:

  • 1 (3–4 pounds) chuck roast
  • 1 packet ranch dressing mix
  • 1 packet au jus gravy mix
  • 1/4 cup butter
  • 45 pepperoncini peppers

Optional Additions:

  • Quartered russet potatoes
  • Baby carrots

Instructions

  • Place the chuck roast in the slow cooker.
  • Sprinkle the ranch dressing mix and au jus gravy mix evenly over the top of the roast.
  • Add the butter on top of the roast and arrange the pepperoncini peppers around it.
  • Cover and cook on low for 8 hours, or until the roast is fork-tender.
  • Optional: Add quartered potatoes and baby carrots during the last 1–2 hours of cooking.
  • Shred or slice the roast and serve with the sauce over mashed potatoes, rice, or noodles.

Notes

  • Do not add water or broth; the roast creates its own juices.
  • For a thicker sauce, skim off excess fat and whisk in a cornstarch slurry before serving.
