  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (28 ounces) diced tomatoes, undrained
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese
  • 1 cup crushed tortilla chips (for topping)
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Brown the ground beef with chopped onion and minced garlic in a skillet over medium heat. Drain excess fat.
  2. Transfer the mixture to a slow cooker and add kidney beans, black beans, corn, diced tomatoes, chili powder, cumin, smoked paprika, salt, and pepper.
  3. Stir well to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until heated through.
  5. About 15 minutes before serving, sprinkle shredded cheddar cheese on top and cover until melted.
