Ingredients
- 2 tbsp sunflower oil or ghee
- 1.5 kg (3.3 pounds) braising beef
- 1 large onion (chopped)
- 2 red bell peppers (chopped)
- 4 cloves garlic (minced)
- 2 tsp minced ginger
- 2 heaped tbsp curry paste
- 400 g (14 oz) tin finely chopped tomatoes
- 400 ml (14 oz) tin full fat coconut milk
- Chopped coriander (cilantro) for garnish
Instructions
- Preheat the slow cooker to high.
- Season beef with salt and pepper; sear in a frying pan until browned.
- Transfer seared beef to the slow cooker.
- In the same pan, cook onion and bell peppers until softened.
- Add garlic, ginger, curry paste, and crumbled stock cube; stir until fragrant.
- Mix in tomatoes and coconut milk; bring to a boil and pour over beef in the slow cooker.
- Cover and cook on high for 5-6 hours or low for 7-8 hours.
- To thicken, stir in cornstarch mixture if desired.
- Serve garnished with coriander over rice or with naan.
