Ingredients

  • 1 pound shrimp (peeled and deveined)
  • 1 cup celery (finely diced)
  • 1/2 red onion (finely minced)
  • 2 cloves garlic (minced)
  • 1/2 cup mayonnaise
  • 2 teaspoons lemon juice
  • Fresh dill (chopped)
  • Salt and pepper (to taste)

Instructions

  1. Boil salted water in a medium pot with quartered lemon for flavor.
  2. Prepare an ice water bath in a large bowl.
  3. Cook shrimp in boiling water for 2-3 minutes until pink and opaque, then transfer to the ice bath.
  4. Drain and pat dry the shrimp. In a small bowl, combine mayonnaise, garlic, lemon juice, dill, salt, and pepper to make the dressing.
  5. In a large bowl, mix shrimp with celery and red onion. Add dressing and toss gently to coat.
  6. Chill for at least an hour before serving.
