For the Pasta:
- 10 ounces fettuccine pasta
- Salt (for boiling water)
For the Alfredo Sauce:
- 4 tablespoons butter
- 1 cup heavy cream
- ¾ cup freshly grated Parmesan cheese
- Salt and pepper, to taste
For the Shrimp:
- 1 pound shrimp, peeled and deveined
- 1 teaspoon minced garlic
- 1 tablespoon butter
- Salt and pepper, to taste
- 2 tablespoons chopped parsley, for garnish
Instructions
Step 1: Cook the Pasta
- Bring a large pot of salted water to a rolling boil.
- Add fettuccine and cook according to package instructions until al dente.
- Reserve ½ cup pasta water, then drain the pasta and set aside.
Step 2: Cook the Shrimp
- Pat shrimp dry and season with salt and pepper.
- Heat 1 tablespoon butter in a large pan over medium-high heat.
- Add shrimp in a single layer and cook for 3-4 minutes, flipping halfway, until pink and opaque.
- Stir in minced garlic and cook for 30 seconds.
- Remove shrimp from the pan and set aside.
Step 3: Make the Alfredo Sauce
- In the same pan, melt 4 tablespoons butter over medium-low heat.
- Pour in heavy cream and simmer for 4-5 minutes, stirring occasionally. (Do not boil.)
- Gradually whisk in Parmesan cheese until melted and smooth.
- Season with salt and pepper to taste.
- If the sauce is too thick, add a splash of reserved pasta water to loosen it.
Step 4: Combine Everything
- Add the cooked fettuccine to the Alfredo sauce, tossing gently to coat.
- Return the shrimp to the pan and mix well.
- Remove from heat and garnish with fresh parsley.
Step 5: Serve & Enjoy
- Serve immediately with extra Parmesan cheese and fresh cracked black pepper.
- Pair with garlic bread or a crisp salad for a complete meal.
Notes
- Use fresh Parmesan cheese—pre-grated varieties don’t melt as well.
- Cook shrimp just until pink to prevent rubbery texture.
- For a lighter version, substitute half-and-half or Greek yogurt for heavy cream.
