  • 2 tablespoons olive oil
  • 2 large zucchini
  • 1 red bell pepper
  • 1 cup cherry tomatoes
  • 1 lemon (juiced and zested)
  • 1 tablespoon honey
  • Seasonings: garlic powder, onion powder, dried oregano, salt, and pepper
