Ingredients
- 12 ounces cooked Italian chicken sausage links
- 1 red bell pepper
- 1 yellow bell pepper
- 1 small onion
- 1 cup instant brown rice
- 1 cup low-sodium chicken broth
- 1 can (15 ounces) fire-roasted tomatoes
Instructions
- In a large nonstick skillet over medium-high heat, heat 1 tablespoon olive oil. Add the sliced sausage and brown for 5-8 minutes. Remove and set aside.
- Wipe the skillet clean and add the remaining olive oil. Sauté diced bell peppers and onion for about 3 minutes until softened.
- Add instant brown rice, garlic, and optional red pepper flakes; stir for 30 seconds until fragrant.
- Pour in chicken broth and fire-roasted tomatoes; combine well.
- Bring to a boil, then cover and reduce heat to simmer for about 5 minutes.
- Stir in the reserved sausage. Cover off heat for another 5 minutes or until rice is tender.
