  • 1 ½ cups chocolate cookie crumbs
  • ⅓ cup granulated sugar
  • ⅓ cup unsalted butter (melted)
  • 8 ounces dark chocolate (chopped)
  • 1 cup heavy cream
  • 2 tablespoons unsalted butter (for ganache)
  • 1 cup granulated sugar (for caramel)
  • 6 tablespoons unsalted butter (cubed for caramel)
  • ½ cup heavy cream (for caramel)
  • 1 teaspoon sea salt

Instructions

  1. Preheat oven to 350°F (175°C). Mix cookie crumbs, sugar, and melted butter in a bowl. Press into a 9-inch tart pan and bake for 10 minutes. Allow to cool.
  2. Heat cream until simmering; pour over chopped chocolate in a heatproof bowl. Let sit then stir until smooth. Add butter and mix until incorporated.
  3. Pour ganache into cooled tart crust and refrigerate for at least 2 hours to set.
  4. For caramel, melt sugar in a saucepan while stirring until amber. Remove from heat, whisk in cubed butter, then slowly add cream while whisking until smooth. Stir in sea salt.
  5. Pour salted caramel over the set ganache and return to fridge for another 30 minutes before serving.
