Description

This easy Rotel Dip recipe is the ultimate cheesy Tex-Mex appetizer! Made with Velveeta, ground beef, and Rotel tomatoes, it’s perfect for game days, parties, and snacking.

Ingredients

Scale
  • 1 lb ground beef or sausage
  • 16 oz Velveeta cheese, cubed
  • 1 can (10 oz) Rotel tomatoes with chilies, undrained
  • ½ teaspoon chili powder (optional)

Instructions

  • Cook the ground beef or sausage in a skillet over medium heat until browned. Drain excess fat.
  • Reduce heat and add cubed Velveeta cheese and Rotel tomatoes with juices.
  • Stir until the cheese is fully melted and smooth.
  • If the dip is too thick, add a splash of milk to loosen it.
  • Serve warm with tortilla chips, pretzels, or fresh veggies.

Notes

  • Substitutions: Use salsa instead of Rotel for a different flavor.
  • Slow Cooker Method: Add all ingredients to a crockpot and heat on low for 2 hours, stirring occasionally.
  • To Store: Refrigerate leftovers in an airtight container for up to 4 days.
