  • 1 whole head garlic
  • pounds russet potatoes
  • 1 cup chopped onions
  • 1 leek
  • 4 tablespoons salted butter
  • 45 cups low-sodium chicken or vegetable broth
  • 1 cup whole milk
  • ¼ cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 4 slices country-style white bread
  • Grated Gruyère cheese

Instructions

  1. Preheat the oven to 375°F (190°C). Cut the top off the garlic head, drizzle with olive oil, season, wrap in foil, and roast for about 40 minutes until soft.
  2. Cook diced russet potatoes in boiling water until fork-tender; drain and set aside.
  3. In a large pot, melt butter over medium heat. Add onions and leeks; sauté until softened.
  4. Stir in flour and cook for one minute. Gradually whisk in broth, milk, cream, thyme; season with salt and pepper.
  5. Add potatoes and roasted garlic to the pot. Blend until smooth using an immersion blender.
  6. For croutons, butter bread slices, add Gruyère cheese between two slices, cook until golden brown on both sides, then cut into croutons.
  7. Serve soup garnished with extra Parmesan and grilled cheese croutons.
