  • 2 cups cherries (washed, pitted, and halved)
  • 1 1/3 cups granulated sugar
  • 2 large eggs
  • 5 tablespoons unsalted butter (melted)
  • 3/4 cup all-purpose flour
  • 3/4 cup Dutch process cocoa powder
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper. Spread halved cherries on the sheet, sprinkle with sugar, and roast for about 10 minutes until softened. Allow to cool.
  2. Lower the oven temperature to 325°F and prepare an 8×8 inch baking pan by spraying it with non-stick spray and lining it with parchment paper.
  3. In a mixing bowl, sift together flour, cocoa powder, cornstarch, and salt.
  4. In another bowl, beat together granulated sugar, eggs, and egg yolk on high speed until light and fluffy (about 5 minutes).
  5. Mix in melted butter, oil, and vanilla extract into the egg mixture until combined.
  6. Gently fold dry ingredients into the wet mixture using a rubber spatula.
  7. Fold in half of the roasted cherries and chocolate chips until just combined.
  8. Pour batter into the prepared pan and bake for 40–50 minutes until edges are set but center is slightly underdone.
