Ingredients

  • Roasted Carrots:
    • 1 1/2 lbs carrots
    • 2 tbsp olive oil
    • 1 tbsp honey
    • 2 tsp sumac
    • 1 1/2 tsp za’atar
    • 1 tsp kosher salt
    • 1/2 tsp black pepper
  • Whipped Feta:
    • 3/4 cup Greek yogurt
    • 8 oz block feta
    • 2 tsp lemon zest
    • 1/2 lemon, juiced
    • 2 garlic cloves
    • 1 tbsp honey
    • 1/4 cup olive oil
    • Salt and pepper to taste

Instructions

  • Preheat oven to 400°F. Line a baking sheet with parchment paper.
  • In a food processor, blend Greek yogurt, feta, lemon zest, lemon juice, garlic, honey, and olive oil until smooth. Season with salt and pepper. Refrigerate.
  • Wash carrots, trim tops, and peel if desired.
  • Toss carrots with olive oil, honey, sumac, za’atar, salt, and pepper. Spread on baking sheet.
  • Roast carrots for 20–25 minutes, until tender and caramelized.
  • Spread whipped feta on a plate, top with roasted carrots, drizzle olive oil, and garnish.
