			- Roasted Carrots:
- 1 1/2 lbs carrots
 - 2 tbsp olive oil
 - 1 tbsp honey
 - 2 tsp sumac
 - 1 1/2 tsp za’atar
 - 1 tsp kosher salt
 - 1/2 tsp black pepper
 
 - Whipped Feta:
- 3/4 cup Greek yogurt
 - 8 oz block feta
 - 2 tsp lemon zest
 - 1/2 lemon, juiced
 - 2 garlic cloves
 - 1 tbsp honey
 - 1/4 cup olive oil
 - Salt and pepper to taste
 
 
Instructions
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
 - In a food processor, blend Greek yogurt, feta, lemon zest, lemon juice, garlic, honey, and olive oil until smooth. Season with salt and pepper. Refrigerate.
 - Wash carrots, trim tops, and peel if desired.
 - Toss carrots with olive oil, honey, sumac, za’atar, salt, and pepper. Spread on baking sheet.
 - Roast carrots for 20–25 minutes, until tender and caramelized.
 - Spread whipped feta on a plate, top with roasted carrots, drizzle olive oil, and garnish.
