  • 8 slices of toast
  • 600 grams roast beef
  • Salt and freshly ground pepper
  • 1 tablespoon mustard
  • 4 tablespoons vegetable oil
  • 2 onions
  • Handful of lettuce (such as arugula and spinach)

Instructions

  1. Preheat the oven to 140°C (275°F). Season the roast beef with salt and pepper, then sear it in a frying pan with 2 tablespoons of oil until golden brown. Brush mustard on top and roast in the oven for about 30 minutes.
  2. While the beef roasts, slice the onions into rings and cook them in the same pan until golden brown. Season to taste.
  3. Rinse and pat dry the lettuce; chop coarsely.
  4. Toast the bread slices. Let the roast beef rest for 5 minutes before slicing thinly.
  5. Assemble by layering roast beef, caramelized onions, and lettuce between two slices of toast. Cut in half diagonally before serving.
