Description

  • 2 tsp instant yeast (or equivalent)
  • 1 large egg
  • 1 egg yolk
  • 50 grams (1/4 cup) sugar
  • 1/2 tsp vanilla extract
  • 1/2 tsp salt
  • 375 grams (3 cups) all-purpose flour
  • 57 grams (4 tbsp) unsalted butter, softened
  • 1 egg for egg wash

Filling:

  • 150 grams (1 1/4 cup) fresh or frozen raspberries
  • 75 grams (1/3 cup) sugar
  • Lemon zest (optional)
  • Pinch of salt
  • 57 grams (4 tbsp) unsalted butter

Topping:

  • 36 raspberries (3 per pastry)
  • 1 portion kagecreme (pastry cream)
  • 118 ml (1/2 cup) heavy whipping cream (optional)

Instructions

1. Prepare the Dough:

  • Warm the milk and dissolve the yeast. Let it rest until frothy.
  • Mix egg, egg yolk, sugar, vanilla, and salt in a large bowl. Add the yeast mixture.
  • Gradually stir in the flour and softened butter until a dough forms. Knead until smooth.
  • Let the dough rise in a warm place for 45 minutes.

2. Make the Filling:

  • Cook raspberries, sugar, butter, and salt over medium-low heat until thickened. Add optional lemon zest. Cool completely.

3. Shape the Swirls:

  • Roll out the dough to 1/4 inch thickness. Spread the raspberry filling evenly, then roll tightly into a log.
  • Slice into 12 pieces and place on baking sheets. Let rise for another 45 minutes.

4. Add Pastry Cream & Bake:

  • Preheat the oven to 350°F (175°C). Brush the swirls with egg wash.
  • Press the center of each swirl to make a well and fill with pastry cream. Top with raspberries.
  • Bake for 15 minutes, until golden brown. Cool for 10 minutes before serving.

  • Chill the Filling: Ensure the raspberry filling is completely cooled before spreading to prevent soggy dough.
  • Tight Rolling: Roll the dough tightly for defined swirls and to avoid filling leaks.
