For the Meatballs:

  • 1 lb ground turkey (93% lean)
  • 1 large egg, beaten
  • ½ cup quick cook oats
  • 1 tsp kosher salt
  • 1 tsp ground black pepper
  • ½ tsp garlic powder
  • ½ tsp dry mustard
  • 2 tbsp cold butter, grated

For the Raspberry Glaze:

  • 12 oz fresh raspberries
  • 3 tbsp soy sauce
  • 4 tbsp brown sugar
  • 2 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp Sriracha

Instructions

  • Prepare the Meatballs:
    • Combine ground turkey, salt, pepper, garlic powder, dry mustard, oats, and beaten egg in a mixing bowl.
    • Grate cold butter over the mixture and gently fold to combine. Avoid overmixing.
    • Cover the bowl and refrigerate for 15 minutes to firm up the mixture.
  • Prepare the Raspberry Glaze:
    • Combine raspberries, soy sauce, brown sugar, lemon juice, Dijon mustard, and Sriracha in a saucepan.
    • Simmer over medium heat for 20 minutes, stirring occasionally.
    • Use a spoon to mash the raspberries, then strain the mixture through a fine mesh sieve to remove seeds.
  • Bake the Meatballs:
    • Preheat oven to 350°F. Shape the chilled meat mixture into 15 evenly sized meatballs.
    • Arrange meatballs in a greased casserole dish, ensuring they’re close together.
    • Bake for 20 minutes.
  • Glaze the Meatballs:
    • Remove meatballs from the oven and pour the strained raspberry glaze over them.
    • Return to the oven and bake for an additional 10–15 minutes, or until the internal temperature reaches 170°F.
  • Serve:
    • Spoon any remaining glaze from the bottom of the dish over the meatballs before serving.

Notes

  • If using frozen raspberries, reduce soy sauce by 1 tbsp.
  • For a thicker glaze, mix 1 tsp cornstarch with 2 tsp water and stir into the simmering glaze.
