- 4 cups potatoes, peeled and diced
- 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- ½ cup milk
- 1 medium onion, finely chopped
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- ½ teaspoon paprika
- 2 tablespoons olive oil
- ½ cup breadcrumbs (optional)
- 2 tablespoons fresh parsley, finely chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large pot, boil salted water and cook diced potatoes until tender (10-12 minutes). Drain and set aside.
- In a skillet, heat olive oil over medium heat. Add chicken pieces along with salt, pepper, garlic powder, and paprika. Cook until browned (6-8 minutes). Remove from heat.
- In a mixing bowl, combine cooked potatoes, chicken, onion, sour cream, milk, thyme, and half the cheddar cheese. Mix gently.
- Transfer the mixture to a greased 9×13 inch baking dish and top with remaining cheddar cheese (and breadcrumbs if desired).
