  • 4 cups potatoes, peeled and diced
  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • ½ cup milk
  • 1 medium onion, finely chopped
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • ½ teaspoon paprika
  • 2 tablespoons olive oil
  • ½ cup breadcrumbs (optional)
  • 2 tablespoons fresh parsley, finely chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large pot, boil salted water and cook diced potatoes until tender (10-12 minutes). Drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Add chicken pieces along with salt, pepper, garlic powder, and paprika. Cook until browned (6-8 minutes). Remove from heat.
  4. In a mixing bowl, combine cooked potatoes, chicken, onion, sour cream, milk, thyme, and half the cheddar cheese. Mix gently.
  5. Transfer the mixture to a greased 9×13 inch baking dish and top with remaining cheddar cheese (and breadcrumbs if desired).
  6. Bake for 25-30 minutes or until golden brown and bubbly.
