  • 1 cup graham cracker crumbs
  • ¼ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 1 (8-ounce) package cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • ¼ cup heavy cream
  • 2 tablespoons finely ground pistachios
  • 1 tablespoon instant coffee granules
  • Pinch of salt
  • ¼ cup crushed pistachios

Instructions

  1. Preheat the oven to 325°F (165°C). In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press into mini cheesecake pans and bake for 8-10 minutes. Cool.
  2. Beat softened cream cheese until smooth. Gradually add powdered sugar and vanilla extract.
  3. In another bowl, mix heavy cream, pistachios, coffee granules, and salt until blended. Fold into the cream cheese mixture.
  4. Spoon filling over the cooled crusts and smooth the tops.
  5. Bake for 15-18 minutes until set; cool at room temperature before chilling in the fridge for at least 4 hours.
