  • 1 cup unsalted butter (room temperature)
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 pint fresh raspberries (or 1 cup frozen raspberries)
  • 2 1/4 cups granulated sugar
  • 6 tablespoons all-purpose flour
  • 6 eggs
  • Juice of 3 lemons

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9" x 13" baking pan and line it with parchment paper.
  2. Blend the raspberries with 1 tablespoon of water until smooth. Strain through a sieve to remove seeds; set aside.
  3. In a mixing bowl, combine butter, flour, salt, and sugar for the crust. Mix until smooth and press into the bottom of the prepared pan. Bake for 15-20 minutes until golden.
  4. For the filling, whisk together sugar and flour in another bowl. Add eggs and lemon juice, then gradually mix in raspberry puree until light pink.
  5. Pour filling over the baked crust. Bake for an additional 25-30 minutes until edges are set but center is slightly wobbly. Cool completely before slicing.
