Ingredients
- 1 cup unsalted butter (room temperature)
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup granulated sugar
- 1/2 pint fresh raspberries (or 1 cup frozen raspberries)
- 2 1/4 cups granulated sugar
- 6 tablespoons all-purpose flour
- 6 eggs
- Juice of 3 lemons
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9" x 13" baking pan and line it with parchment paper.
- Blend the raspberries with 1 tablespoon of water until smooth. Strain through a sieve to remove seeds; set aside.
- In a mixing bowl, combine butter, flour, salt, and sugar for the crust. Mix until smooth and press into the bottom of the prepared pan. Bake for 15-20 minutes until golden.
- For the filling, whisk together sugar and flour in another bowl. Add eggs and lemon juice, then gradually mix in raspberry puree until light pink.
- Pour filling over the baked crust. Bake for an additional 25-30 minutes until edges are set but center is slightly wobbly. Cool completely before slicing.
